Let’s talk about it

Its been some months since I’ve been here, I’d forgotten about it. This is normal for someone with a brain injury.

There I was thinking I was just getting back to normality then Covid19  comes along! I’ve now been indoors for a week and I’ve been busy.

Having no support I’ve struggled daily to get my shopping and it’s been a challenge to say the least. But this is Mike we’re talking about and I don’t quit!

I have managed to cook some amazing dishes to help me use what I have here a dish I made today its Kung-Pao Chicken.

Skillet Chicken Tikka Masala

Quick and easy weeknight Indian food!

  • 1 (14.5-oz) can diced tomatoes
  • 4 boneless, skinless chicken breasts cut into 1-inch chunks
  • 1 (14.5-oz) can diced tomatoes
  • 4 boneless, skinless chicken breasts cut into 1-inch chunks
  • Salt and pepper
  • 1 tablespoon vegetable oil
  • 1 onion, chopped fine
  • 1 tablespoon garam masala
  • 2 garlic cloves, minced
  • 2 teaspoons grated fresh ginger
  • 1/2 cup heavy cream
  • 1/4 cup chopped cilantro
  1. Pulse tomatoes in food processor until coarsely ground. Pat chicken dry with paper towels and season with salt and pepper. Heat oil in large skillet over medium-high heat until just smoking. Cook chicken until browned all over, about 5 minutes. Transfer to plate.
  2. Add onion to empty skillet and cook over medium heat until softened, about 5 minutes. Add garam masala, garlic, and ginger and cook until fragrant, about 30 seconds. Add tomatoes and bring to simmer. Reduce heat to medium low, cover, and cook until slightly thickened, about 3 minutes.
  3. Stir in cream and browned chicken, along with any accumulated juices, and simmer until sauce is thickened, about 5 minutes. Stir in cilantro. Season with salt and pepper. Serve.

Hi everyone..

This is truly an easy dish for a snack. Given the ease and extras that can be added to make this a meal is endless.

Please see the way the flavours come together and give you a delightful meal. Prepare in advance to give more flavour. Eat hot or cold, as a picnic item or just to pick if hungry.

Hint, you can de-bone most of the bones whilst the wings are just out of the oven.

Hold tightly at each end twist and pull gently apart to remove the long bones, this allows the wings to keep their shape.

Serve with Pilau rice or salad, enjoy this tasty treat..

Trauma of a Stroke or a Bleed on the Brain

After a bleed on the Brain or other Stroke/Trauma your personality can change.

It might be scary but there is a lot of support out there for you if you know where to look.

Reading about what happened to you is ok, but, talking to those that have already been there will help you understand and help you travel along your recovery journey.

There are online support groups, blogs like this and so on. Your first port of call is asking for help before you are discharged from your Hospital.

Secondly you really must contact your GP as soon as you are well enough to go out. Firstly to get any repeat medication you might need, always go with someone just in case it gets too much for you.. I’ll update this thread as I get my information in the right order.

Most people think that cooking is easy! For some it is. But, for others like myself that have had a bleed on the brain, or a Stroke it’s one of the hardest tasks to relearn.

But in the end being self sufficient is on of the best goals you can set yourself, once completed you’ll feel over the moon!

Simple tasks like the picture above is full of dangers for us! Really you say? Yes I do!

There are sharp knives involved, travelling to the shops, often alone or with company. Using the right equipment in a safe manner. Making sure you’ve washed the salad.

Simply put it can be a challenge! But with guidance and being repetitive you to can produce a dish like the one above.

I’ve heard that some survivors struggle, too scared to try, I say be patient, keep trying, ask your partner to assist you until you feel comfortable enough to try without them in the kitchen.

Trust me when I say the first time you do this dish alone and without help will lift your confidence higher than you thought possible…

Please try and prove me wrong!

These are just some things as a survivor needs to plan when starting out looking after yourself…. Especially in the kitchen.
